- Prepare 3 cups parboiled rice
- Get 1 cup urad dal
- Take 1 tsp methi or fenugreek seeds

Here, we prepare a potato masala as a stuffing and prepare idlis with the normal idli batter. Different types of stuffing can be prepared using variations in the masala. Idli sandwich, is a simple tiffin or starter made with idli batter and potato stuffing. I have already given the recipe of stuffed idli in my second cook book, Kutties kitchen.
Steps to make Idly sandwich or stuffed masala idli:
- Soak rice, dal & methi seeds in water for 6 hrs & grind into a fine thick batter. Add salt & allow it to ferment for 8-10hrs. Batter is ready.
- For stuffing. Cut 2 potatoes into small cube & boil untill it's soft & tender. Mash it well & keep it aside. In a pan heat oil & add mustard, urad dal, finely chopped onion, green chilli salt & turmeric. when it turns golden brown add mashed potatoes & mix it well with lil salt. Masala is ready.
- Pour 1tbsp of batter into each mold & place flattened masala & pot 2-3tbsp of batter to cover the filling. Now steam it for 10-15 mins & steam it.
- Idly sandwich is ready. Enjoy!!
I wanted to post the recipe in Jeyashri's kitchen too and tried this morning. After i finished making this, i had this thought of smearing the idlis with molaga podi. I made this idli sandwich to share in Aval kitchen and it got published last month so thought to record it here too. Turn on the heat and bring it to boil. Take idly mould and grease it with some oil.
