- Now the mutton is done. Separate the chops from the stock and keep aside. Strain the stock and save it.(in this we are going to cook the rice.)
- Take a pot add oil and then chopped onion and then ginger garlic paste. Saute well. Add ghee and add strained rice and coat well. Add 2 glass of stock and 2 glass water.(double amount of rice). Dear stock is saved for making soup. When the water boils adjust salt, add vinegar, rose water and green chilli and cook on sim till done.
- Cut carrot into juliennes, tomato, capsicum, chickpeas, eggs, chillies. Fry carrots and add to the rice and chopped coriander and mix well.(keep some carrots for garnishing). Dish out the rice to a baking plate.
- For the mutton chops masala, add oil to a pot and then add onions, ginger garlic paste saute and add the tomato paste.
- Add garam masala, meat masala and curd and saute well.
- Cook till oils comes out and add the chops and coat well in masala.
- Assemble the chops on rice, the toppings,eggs,chickpeas,tomato,capsicum,nuts, fried onions, coriander,chilli flakes,raisins.
- Now the dough has doubled. Knead it and roll it little bigger than the diameter of the plate.
- Place a rolling pin in between and fold one side on to the rolling pin and carefully lift the rolled dough and place on the plate.
- Wet hands and seal the sides to the plate. Brush egg+butter mix and sprinkle sesames seeds.
- Bake in preheated oven for 20-25 mins and when the top is brown take it out and brush with some butter. Serve as it is on to the dining table and in front of your guest cut the side and open.
