  4. Add potatoes. Stir. Add cornstarch slurry and stir. Add little water and the consistency should be dry and not watery.
  5. Plate and enjoy a lovely starter

Mix cornflour in ¼ cup vegetable stock and set aside. Heat chilli oil in another non-stick pan. Add red chillies and sauté for a minute or until crisp. Add onion, ginger and garlic and sauté till soft. In a bowl add potatoes, corn-starch, black pepper powder, salt and toss it properly with light hands, make sure it is coated completely.
