The method of preparation and serving is also unique as compared to the other poplar biryani types. In a large saute pan or pot, heat the dalda, and ghee together. Steps to make Malbar Chicken Biryani:
  1. Wash the chicken and drain. Heat oil in vessel add sliced onions fry till translucent add ginger garlic paste, green chilli paste. Saute till raw smell goes.
  2. Add the chicken pieces,saute for a min add haldi powder, dhania powder, jeera powder, red chilli powder, biryani masala and saute for some time then add the tomatoes and salt cook till tomatoes are mashed and mixed with the masala
  3. Add curds cook till it leaves the sides, add lemon juice, some coriander and mint leaves cook till the chicken is tender then add the coconut milk mix and off the flame
  4. Rice :- Soak the rice for half an hour. Heat oil in a vessel add dalchini,laung, cardamoms, staranise, fennel seeds saute for a min add rice stir it then add water 1 inch above the rice, add salt and cover and cook till rice is done. Fluff up the rice with a fork
  5. Assembling:- Grease a heavy bottom pan add the chicken masala then add some fried onions, chopped coriander and mint leaves, cashewnuts & raisins. Then add the cooked rice on top of the chicken masala
  6. Sprinkle saffron colour, fried onions, chopped coriander and mint leaves and cashewnuts. Cover it with a lid and keep it on a tawa for dum on medium flame for 15 to 20 mins or till steam comes out. While serving garnish with fried onions

This is then sealed and cooked slowly in steam (dum method) to get this incredibly aromatic and toothsome chicken biryani that is quite literally the stuff of legends.
