Heat oil in heavy large pot over medium heat. Place the capsicum, onion, garlic, coriander and parsley in a food processor. If you dont have a processor- chop ingredients as finely as possible or use a mortar and pestle. In a saucepan, heat the butter and oil.

  1. In a mixure jar add all chutney ingredient and make paste and keep aside
  2. In a pan add ghee, add cumin, asafoetida and carrots and cabbage cook for 2 min. Then add cashew
  3. Then add chopped spring onions leaves, Green chilli paste
  4. Then add Corriender chutney and turmeric powder, and salt and cook for 2 min.
  5. Then add cooked rice and mix well, off the flame and add chopped coriander mix well. Serve in serving plate.

Coriander is also my favorite herb. Its perfect for the busy mornings. Getting the consistency of the rice is the key to variety rice. I always cook the rice in a pressure cooker using pot in pot method. A delicious marinade for flank steak blending the flavors of crushed coriander seed, lime juice, and soy sauce.
