Heat oil in heavy large pot over medium heat. Place the capsicum, onion, garlic, coriander and parsley in a food processor. If you dont have a processor- chop ingredients as finely as possible or use a mortar and pestle. In a saucepan, heat the butter and oil.

Instructions to make Coriander Rice:
  1. In a blender add ginger, green chili, lots of coriander and 2 Tbs water. Make a paste.
  2. In a pan add oil and put mustard seeds, zeera, cloves, black pepper, peanuts and roast a little.
  3. Now add bay leaf and chopped onion. Make it soft. Then add green coriander paste in it. Cook it just 1 minute.
  4. Now add boiled rice and mix.
  5. Now add garam masala powder, black pepper, salt and lemon juice. Now mix well and dish out it. Garnish with coriander leaves.

Coriander is also my favorite herb. Its perfect for the busy mornings. Getting the consistency of the rice is the key to variety rice. I always cook the rice in a pressure cooker using pot in pot method. A delicious marinade for flank steak blending the flavors of crushed coriander seed, lime juice, and soy sauce.
