Chicken and mushrooms have been saving dinner for years now. Add the sherry or broth, green onions, garlic, salt and pepper. Add mushrooms, garlic and a pad of butter to the chicken liquid and cook down until the the mushrooms are tender and most of the liquid has evaporated. - Pound breasts until 1/4" thick. Dredge in flour mixture.
- Heat oil over medium heat. Add chicken and saute about 7 minutes, turning once. Remove and keep warm.
- Add butter to frypan and increase heat to high. Add onion and mushrooms. Saute about 5 minutes. Reduce heat to low.
- Add cream, parsley, mustard and lemon juice. Bring to a boil stirring constantly.
- Add juices from chicken into cream mixture. Pour sauce over chicken and serve.
Add the sauce ingredients but DO NOT ADD SALT. Cook in the same skillet so it absorbs the chicken and buttery mushroom garlic flavors left behind. Remove chicken and set aside on a plate. Add the sliced mushrooms and cook for a few minutes until tender. When mushrooms have softened slightly and begun to sweat, add wine, thyme or parsley, and salt and pepper to taste.
