  6. Now, the oil, heat some oil (i used rice bran) and in a tea strainer add some dry fenukgreek(methi dana) and very carefully hold the strainer as shown in the oil.
  7. You'll see that the seeds will change colour remove them from the oil. This step will enhance the taste of methi in the matris.
  8. The flame has to be medium to low, be very careful, its tricky when you are working with besan. It burns very quickly.
  9. You have to constantly be careful about the temperature. I burnt some of them, you will too, probably. Therefore, its best if you roll all the matris first and then start frying them. So that your full attention is towards the flame control.
  10. Also, keep the temprature inclined towards low and let matris attain that golden brown colour. You might get some soggy matris if you undercook them. And burnt ones if you overcook them. It's complicated.
  11. Your kitchen will smell like these matris all day long. The more you let the dough rest, the better matris you will get. Enjoy with tea.
