- Take 28 oz diced tomatoes with juice's
- Get 1 small yellow onion diced

It is spicy, tangy and full of great flavors. This salsa is fresh, healthy and contains no artificial. This should be called Jen's Fresh HOT and Spicy Salsa. My Husband loved it but we both love HOT Spicy Salsa.
Instructions to make Spicy garlic salsa:
- Mix all ingredients in a med sized pan.
- Heat over med heat. Bring to a summer stirring occasionally.
- Simmer for 15 minutes. Stirring occasionally. Remove from heat.
- Cool in fridge for at least one hour.
- Enjoy!!
- Side note* this recipe works well for canning salsa as well.
I do agree with a few of the other reviews I would drain the tomatoes before mixing in the other ingredients. I also used a couple of garlic cloves (chopped) instead of powder. Lots of flavor - excellent recipe. When the garlic is cooled enough to handle, squeeze the garlic cloves out of the paper. Put the diced tomatoes, Rotel, onion, carrot, jalapeño and all the roasted garlic into the base of a food processor.
