Place the pops on the grill with the bamboo handles of the skewers resting over the foil to prevent them from burning. Baste both sides with the lemon butter dressing while the pops are cooking. Then Mr GG was looking for chips and it hit me; Beetroot chips! I tried three different ways of making the chips, in the oven, in the deep fryer and in the dehydrator.
Steps to make Beetroot Lollipops (Non-Fried, Crispy & Healthy):
- First, dry roast and grind the whole spices as mentioned in Bhaja Masala section and keep it aside.
- Wash, peel & cut the beetroots and carrot into medium sized cubes. Add 1 cup water & cook in a pressure cooker to 2 whistles. Strain & keep in the refrigerator for 15 mins. to dry up the water.
- Now in a grinder, pulse the cooled vegetables to just 2-3 times to get a coarse mixture.
- Heat 1 tsp oil in a pan, add ginger paste, finely chopped green chillies, saute for a min. Add vegetable mixture, grated boiled potato, salt, Amchur powder & Bhaja masala and mix well. Cook till the moisture goes off, and add coriander leaves. Give a good mix & put this in the refrigerator for 10 mins to quickly cool it down.
- Now mix the corn flour with little water to make the slury. Take out stuffing & give shape of small balls. Dip in cornflour mixture & coat gently with bread crumbs.
- Keep all these coated balls in freezer for at least 10-15 mins. This step is important to get the super crispy chops.
- Heat the appe pan, add few drops of oil in each holes. Put these chops, cook for 5-6 mins, turn the chops and gain add 1-2 drops of oil. Cook till crispy.
- Insert toothpick & Enjoy hot & tasty beetroot lollipops with green chutney & some salad!
For health, taste and convenience my favourite method was the dehydrator. Beetroot in Dehydrator Rack with Truffle Salt If you are buying ready cooked beetroot from the supermarket check that it has not been pickled or has vinegar added in any way. You want plain cooked beetroot for this recipe. The other ingredients for my fried beetroot recipe are capers (really useful in cooking, always keep a little jar in the fridge). The beetroot crisps / chips are delicious on their own, or served as an accompaniment or as an attractive and tasty garnish.
