Although you can buy breadfruit easily in Sri Lanka, I am not that fortunate. Whenever I visit Sri Lanka, it is not the breadfruit. Place the coriander, cumin and vegetable curry powder in a small heavy-based frying pan and dry roast over low heat until dark brown. Curry is widely known throughout the Caribbean, as well as breadfruit so why not combine them.
Steps to make Breadfruit Curry:
- Clean and cut the breadfruit. Add it to a pan. Add water, Curry leaves, salt, Onion, chilli powder, garlic, turmeric, fenugreek seed's and mix well.
- Let the breadfruit Curry cook for 25 minutes. or until the Curry becomes tender. Then add coconut milk.
- Cook on low fire. For 10 minutes. Once the Curry reaches a thick consistency switch off the stove.
- For tempering. Pan on a low fire added oil add musterd seeds. Onion Curry leaves. Cook for 1 minutes. Then add red chillies. Temper until all ingredients turn Golden colour. Pour the tempering in to Curry. Serve with rice and Curry.

Breadfruit; Coconut milk & water; Curry leaves, onions, garlic & green chill to taste; Salt, turmeric & cumin seeds; How to: First remove the skin off the breadfruit like you would do to a mango or any fruit/yam with skin. Wash well and cut in half and remove the core of the fruit. The only daunting task in breadfruit curry preparation is peeling, slicing and removing fibrous part from it. Once done it just takes few minutes to cook them.
