In this recipe, I used a few of my favorite in-season vegetables like sweet potato, russet potato, broccoli, baby carrots, green pepper, red pepper, and red onions. Wrapping a portion of vegetables in bacon and roasting them until tender makes such a pretty (and delicious!) package.

- Slice and cut up the bacon.
- Fry the bacon crisp set it aside.
- Slice the brussel sprouts in half, chop the carrots and cauliflower into bite sized pieces, and slice the onion and fennel thinly.
- In the pan with the bacon drippings add vegetables, salt, pepper, and garlic. Cover and cook 30 minutes stirring occasionally.
- Stir fry till all vegetables are tender. Add ham and the bacon to pan with the vegetables in it. Cover let cook 3 minutes.
