In this recipe, I used a few of my favorite in-season vegetables like sweet potato, russet potato, broccoli, baby carrots, green pepper, red pepper, and red onions. Wrapping a portion of vegetables in bacon and roasting them until tender makes such a pretty (and delicious!) package.

  1. Slice and cut up the bacon.
  2. Fry the bacon crisp set it aside.
  3. Slice the brussel sprouts in half, chop the carrots and cauliflower into bite sized pieces, and slice the onion and fennel thinly.
  4. In the pan with the bacon drippings add vegetables, salt, pepper, and garlic. Cover and cook 30 minutes stirring occasionally.
  5. Stir fry till all vegetables are tender. Add ham and the bacon to pan with the vegetables in it. Cover let cook 3 minutes.
