i love this recipe! i used to make mabo tofu from a mix but lately i'm trying to make things from scratch to avoid the chemicals that come in processed foods. this was easy to make & you know exactly what goes in it! i put in eggplant & green peppers & that really added to the dish. i used leftover ham instead of ground pork & it turned out great. also used red chili sauce instead of the hot. Add the chicken stock, cornstarch, soy sauce and sugar to a small bowl and stir to combine. Heat a wok or large frying pan until hot.

Mabo Tofu is so popular that it is found at all Chinese restaurants in Japan, but it is also a staple dinner. Stir the water starch and then pour half of the mixture to the simmering pot.
Steps to make Mabou-tofu:
- Chop the onion finely and cut the tofu in 2cm dise
- Fry onion and mints beef with a little oil in a big fring pan until onion become clear color
- Add other ingredients except arrowroot. After simmer 5 mins, add arrowroot paste (1 tbsp arrowroot & 3tbsp water) for stickiness
- Serve it on rice or separately
You can slightly taste the tofu and add pinch of salt if not salty enough. This is an authentic Sichuan-style mapo tofu, which is both spicy and aromatic. Note: Both the chili bean paste and the Sichuan Peppercorns can be bought online (follow the links) if you don't have a good Chinese market nearby. Use tofu labeled "silken" in a hardness range of medium to firm.
