  2. Prepare 1/4 cup mustard oil

  7. Take 1.5 tsp kashmiri red chilli powder
  8. Prepare 1/2 tsp turmeric powder
  9. Prepare 2 tomatoes finely chopped
  10. Prepare 3 green cillies,slit lengthwise
  11. Prepare 1 pinch asafoetida
  12. Take 1/2 tsp brown sugar
  13. Get 10-12 curry leaves
  14. Get to taste salt
  15. Take as needed dash of lemon juice
  16. Prepare as needed chopped coriander leaves for garnish
  17. Prepare pickle spices (dry roast until the aroma is released. grind to a slightly coarser than fine powder)
  18. Take 1 tsp black mustard seeds
  19. Prepare 1 tsp cumin seeds
  20. Take 1 tsp fennel seeds
  21. Prepare 1/2 tsp fenugreek seeds
  22. Make ready 2 cloves
  23. Get 1/2 tsp nigella seede
  24. Get 4 dry red chillies
  25. Prepare 1/2 tsp carom seeds

  27. Prepare 1/2 tsp whole black pepper

Achari gosht or achari mutton is a wonderful yet rare awadhi cuisine of uttar pradesh which is cooked with mutton bringing out pickled flavors or achari flavors into it. Achari means 'pickled' in Hindi, and achari lamb is a classic curry that melds sweet and tart components magnificently for a festival of flavour in the mouth. You may have also heard of it being called 'achari gosht'. METHOD: In a dish whisk the plain yogurt with one liter of water.

Instructions to make Achari Gosht:
  1. In a wide bottomed, nonstick pan, heat the mustard oil to smoking point. Turn off and let cool completely.
  2. In a bowl mix together yogurt,warter,salt,brown sugar,kashmiri red chilli powder and turmeric powder.
  3. Place the pan with the cooled mustard oil on medium heat.Add asafoetida and onions.Saute and cook until onions turn brown.
  4. Add curry leaves,ginger paste,garlic paste,green chillies and ground pickle spices.Saute for 5 minutes.
  5. Add mutton and saute on high heat until mutton starts to turn brown.
  6. Turn heat to simmer, add the yogurt-spiced water,cover with a tight fitting lid and cook until mutton is 3/4 done.
  7. Add the chopped tomatoes, mix through,cover and cook until mutton is tender and cooked through.
  8. Remove lid,increase heat to high and cook until all the water has dried up and the desired consistency is reached.
  9. Add a dash of lemon juice.
  10. Remove to a serving dish,garnish with chopped coriander leaves and serve hot along with Indian flatbread.
